It’s a simple, cozy way to turn everyday food into intentional self-care because feeling good in this stage of life starts with how we nourish ourselves. “Creamy” Cauliflower Soup By Michelle Dwyer, Holistic Nutritionist www.HealthCoachMichelle.com Directions for: 1. Heat the oven to 425 degrees. 2. Rough chop cauliflower and one onion (you will blend later, so does not need to be precise). 3. On a sheet pan, toss the cauliflower florets and onion with the olive oil and season generously with salt and pepper. 4. Roast until the cauliflower and onion is browned and tender, 30 to 35 minutes. 5. Meanwhile, in a large pot, bring 6-88 cups of organic bone broth to a simmer over medium. 6. Take roasted cauliflower and onion out of the oven and add to pot with broth. 7. Add garlic cloves and seasonings. 8. Cover and simmer until the cauliflower and onion are very soft, 7 to 10 minutes. 9. Off the heat, add the fresh parsley, optional herbs, Ready Set Glow™ powder, and Good Moves™ powder. 10. Using an immersion blender, purée the soup until smooth. Be sure to get out any clumps from powders and herbs should be blended in. 11. If soup is too thick, add more broth or water to taste. If too thin, simmer, uncovered, for 5 to 10 minutes to reduce slightly. (The soup will also thicken as it cools.) Season to taste with salt, pepper and other seasonings.
