Cucumber Tomato Salad

This refreshing salad can be served as lunch or as a side dish for an added 2 grams of fiber per serving to help your household close the dietary fiber gap

Instructions

  1. Peel and slice the cucumber into round slices and add to a bowl. Slice the tomatoes and red onion and add.
  2. Mix together all the dressing ingredients and pour over the salad. 
  3. Toss well and serve.
